Sauerkraut is shredded fresh cabbage that has been fermented by various lactic acid bacteria, including Leuconostoc, Lactobacillus, and Pediococcus. It has a natural sour flavour which results from the lactic acid that forms when the bacteria ferments the sugars in the cabbage (no added vinegar!).

Our Japanese Sauerkraut is a spin of our original sauerkraut with added Japanese flavors with white sesame seeds, Kombu (kelp), and fresh shiso leaves.

BENEFITS

  • Unpasteurized which makes it rich in natural digestive enzymes and living probiotics - highly recommended for people who need to nourish their gut
  • Rich in minerals including copper, manganese, magnesium,  calcium, phosphorous, iron, zinc, molybdenum, and selenium
  • Kombu contains iodine, which helps prevent cancer and goiter; when combined with shiso leaves, it helps people recover from anxiety and short temper, and prevents blood vessel hardening

HOW WE MAKE IT

We make our sauerkraut traditionally in small batches by hand. First, we shred the fresh cabbage and massage it with Himalayan Crystal Salt, before allowing it to ferment in a jar for 3 days. After the first fermentation, we let it further ferment in low temperature until it's ready to be consumed. 

SUGGESTED USE

  • Sauerkraut especially goes well as a condiment with food with high fat content such as meat or nuts. We recommend a slice of sourdough bread and a slab of almond butter topped with our Organic Living Sauerkraut.
