Why You Need Truffles In Your Life

Truffles in your pasta...
Even truffles on your eggs...

And we aren't talking about those delicious chocolate treats that have the same name.  True truffles are a rare treat that we really only eat when we're dining out.  But actually there are many ways you can incorporate this lovely delicious ingredient into your dishes at home without killing your wallet.  

But first, let's learn a little more about these delectable little shroom-like things...

Truffles are actually a type of fungus that grows in the shadow of oak trees.  There are over seven different truffle species all over the world but they are mostly concentrated in the Italian and French countryside. 

Depending which country they are grown, specially trained dogs will locate them based on their natural aroma that happens when truffles interact with certain plants, mammals, and insects.  This synergy also encourages growth of new colonies of the truffle fungus!  Once the dogs detect the truffles, the farmers will then go and dig them up.  

The Taste of Truffles

Each kind of truffle has its own "umami" category of taste.  Whenever you use this as an ingredient, you hardly need to season your dish with anything else.

The black truffle has a much stronger taste and pungent aroma than of its white counterpart.  They can be stored in the freezer and easier to locate, which makes them much more affordable.  On the flip-side, white truffles are quite rare and can cost up to US$3,000 per pound!   If you aren't a fan of black truffles because of its strong taste, try the fresh white truffles.  Their flavour profile is quite different and much more delicate.  

If you can't have the real truffle experience, fear not! You can get truffle-infused oils, jams, tapenades, salt, and even extracts for the fraction of the price! 

But How? 

A lot of these truffle-infused products actually work very well as a finishing condiment to your recipes.  We don't recommend using truffle oils to cook your food under high heat as their smoke point is quite low and the flavour will be compromised.  The full flavour profile is best experienced in room temperature.  You can use many of these products with your veggies, to drizzle on top of your pasta, as a light spread, or to mix into your egg scramble!
