Recipe Inspiration: One-Pan Chicken Thighs With Burst Tomatoes, Harissa, and Feta 🍗🍅

Key Ingredients:
- 6 skin-on, bone-in chicken thighs
- 1½ lb. cherry tomatoes
- ¼ cup harissa paste
- 3 sprigs oregano, divided
- 4 oz. feta cheese
- Crusty bread (for serving)
Steps:
- Prep & Season: 🐔 Pat the chicken thighs dry with a paper towel. Season them generously all over with about 2 teaspoons of kosher salt.
- Make the Sauce: 🥣 In a small bowl, combine the harissa paste, red wine vinegar, and 1 tablespoon of olive oil. Stir until smooth.
- Cook the Chicken: 🔥 Heat 1 tablespoon of olive oil in a large oven-proof skillet over medium-high heat. Place the chicken thighs in the pan skin-side down and sear for 6-8 minutes, until the skin is golden brown and crispy. Flip and cook for another 2 minutes. Transfer to a plate.
- Combine & Bake: 🍅 Preheat your oven to 400°F (200°C). To the same skillet, add the cherry tomatoes and the harissa sauce mixture. Tear the leaves from 2 sprigs of oregano and add them in. Stir everything together, then nestle the seared chicken thighs into the tomato mixture.
- Roast to Perfection: ⏲️ Transfer the skillet to the preheated oven and roast for 20-25 minutes, until the chicken is cooked through and the tomatoes have burst and softened.
- Serve: 🍽️ Remove the skillet from the oven. Scatter the crumbled feta over the top. Garnish with the remaining sprig of oregano. Serve immediately with thick slices of crusty bread to soak up the delicious sauce!
