Yet, they also have a naturally occurring chemical known as phytic acid and some enzyme inhibitors which can interfere with body's absorption of certain nutrients. These enzyme inhibitors and phytic acid are absent in our sprouted pumpkin seeds since they were removed through our soaking process. After the sprouting, we dehydrate the seeds for 24 hours at low temperature. This makes them easier to digest and assimilate and also enhances the full flavor of the seeds.
