Cassia bark, also known as cinnamon bark or Chinese cinnamon, is an aromatic spice commonly used in East and South East Asian cuisine.
There are two varieties of cinnamon, Cassia and Ceylon cinnamon.
Cinnamon bark or Cassia is the thick outer bark of the evergreen tree Cinnamomum cassia. The flavor is sweet but there is an undertone of heat to it that goes superbly well with rich (or ‘hot’) ingredients, whether sweet or savory.”

Cinnamon sticks can be used to flavor dishes, drinks, or sauces and are then thrown away. Cinnamon isn’t just for dessert! It’s been used to flavor meats for thousands of years and found in many savory dishes including:
- Moroccan chicken, chickpea, or lamb tagine
- Middle Eastern chicken shawarma
- Greek braised chicken kapama
- Anything seasoned with Chinese five-spice powder or Jamaican jerk seasoning, such as grilled chicken
- Rice pilafs, including Persian jeweled rice and Indian biryani
