These classicย jalapeno pickles get their tangy flavor through good old-fashioned lacto-fermentation!ย Once we submerged the jalapenos in the saltwater brine along with flavorful garlic, then we let the fermentation begin!ย ย As the microbes eat the natural sugars in the jalapeno, they'll produce lactic acid.ย This will make the pickles nice and sourย and extend their shelf life as well.ย ย ย
How Fermentation Works
- A saltwater brine creates the ideal conditions for the friendly lactobacillus bacteria to ferment the jalapenos and produce lactic acid.
