Kaisei Bussan Okinawa Mozuku - 500g
Known as the superfood of Okinawa, mozuku is a type of seaweed that is commonly eaten cold as a side dish, tempura battered and fried, and as a miso soup garnish in Japan’s southernmost archipelago, Okinawa. Mozuku is filamentous, giving it a shape similar to a pile of noodles, and is somewhat slippery in texture with a light and simple flavor like an ocean breeze. Besides it’s pleasant flavor and intriguing texture, mozuku has another draw for its popularity-- exceptionally high concentrations of the compound fucoidan. Fucoidan is known by food scientists for its unique ability to prevent the formation of blood clots and cancerous tumors. As such, it is thought that regular consumption of mozuku is one of the contributing factors to the long Okinawan life expectancy.
*Please make sure you remove the salt before cooking.
How to remove the salt from Mozuku:
Prepare a large bowl with fresh water and place the salted Mozuku in the bowl.
Rinse the Mozuku thoroughly and remove the water using a sieve. Repeat this 3 to 4 times.
This should suffice, but if you still have a strong salt taste, soak the Mozuku in water for 5 to 10 minutes more.
*It is preserved in salt so you definitely need to remove the salt before using...or it will be way too salty!
After you remove the salt you can use it for making soup, salad, tempura or flavor it with Tamari soy sauce, coconut sugar and vinegar to eat with rice. Mozuku goes very well with Tamari soy sauce!
