Thick, wide strips of Kombu are commonly used to flavour Japanese soups, noodle broths and stocks (dashi). Kombu contains natural glutamic acid - an umami-providing amino acid - that draws out the taste of other foods. A strip of kombu cooked with beans helps to soften them and improve digestibility.
You can also stew it with vegetables, pickle or deep fry it. You can also turn it into a delicious table condiment by pan frying it/oven roasiting and then grinding it into a powder. Want to flavour your popcorn without all that butter and salt? Try and sprinkle some kombu powder on your movie snack!
Suggested Use
Add a small piece to soups, stewed vegetables, and grains as they cook. One-half of a strip to a pound of dried beans tenderizes & enhances in cooking.
