Vinification: The grapes are handpicked and put in little baskets and carried to the winery, for de-stemming, double hand selection and the gapes and soft crushing, maceration-fermentation for 25 days. Malolactic fermentation and maturation in French and American barriques for about 24 months.
Sensory Features: Garnet red. Intense and persistent, spicy (tobacco and jam), aromas of liquorice, fruity a little ethereal. Full bodied, soft, balanced, intense and persistent. Ready to drink upon release but also good for ageing 5/6 years.
Best served with: Excellent with rich first courses, red meat and medium-seasoned and seasoned cheeses.
