We made this because we wanted to make ghee the way we like it!
From grass-fed and grass-finished organic cow's milk, made here in Hong Kong in small batches and cooked slowly in our pot.

About the Butter we use:
We use Isigny Sainte-Mère Organic Unsalted Butter to make our Ghee, and we have chosen this butter because it is a high-quality butter made from the milk of grass-fed and grass-finished cows.

Isigny Sainte-Mère Organic Unsalted Butter is made from the milk of grass-fed and grass-finished cows collected from their own farms in Normandy.
The cows are eating fresh grass rich in nutrients and minerals for at least 7 months of the year.
1) The Cow's Feeding :
- Mainly organic food
- At least 60% of the food must come from their farm
- Grass-fed (compulsory, as long as weather conditions allow it; for example, in winter, it is allowed to keep the cows in the cowshed)
- GMO-free, antibiotic-free, amino acid-free
2) The Cow's Health :
- Limitation on the usage of certain medicines
- Dehorning prohibited (except in case of emergency)
3) The Cow's Housing :
- A space of at least 6 m² per cow
- Comfortable, clean, and dry stalls, with concrete floors covered in litter (straw or other materials)
- Free access to pasture at all times (when weather conditions allow)
How to use Ghee?
1. Cooking and Baking:
- Use ghee for sautéing, stir-frying, roasting, and baking. It has a high smoke point, making it suitable for high-heat cooking.
- Substitute ghee for butter or oil in recipes. Use the same amount as you would for other fats.
- Ghee adds a rich, nutty flavor to dishes. It works well in Indian, Middle Eastern, and other ethnic cuisines.
2. Spreading:
- Use ghee as a spread on toast, muffins, or crackers, similar to how you would use butter.
- Mix ghee with spices, herbs, or honey to make flavored spreads.
3. Drizzling:
- Drizzle ghee over cooked vegetables, rice, dals (lentil dishes), or curries to add extra flavor.
- Use it to finish dishes, like brushing it over naan or paratha.
4. In Baked Goods:
- Replace butter or oil with ghee in cakes, cookies, pie crusts, and other baked goods.
- Ghee can help create a flakier, richer texture.
5. Frying:
- Use ghee for frying foods like pakoras, fritters, or samosas. Its high smoke point makes it suitable for deep frying.
6. In Drinks:
- Add a teaspoon of ghee to your coffee, tea, or hot chocolate for a creamy texture and rich flavor.
- Use ghee to make golden milk or other Ayurvedic beverages.
Is Ghee low-FODMAP?
FODMAPs are a group of fermentable carbohydrates that can cause digestive issues in people with conditions like irritable bowel syndrome (IBS). The FODMAP content of foods is an important consideration for those following a low-FODMAP diet.
In the case of ghee:
- Ghee is made by simmering butter to remove the milk solids and water, leaving behind the butterfat. This process removes the lactose and galacto-oligosaccharides (GOS), which are the FODMAP components in regular dairy.
- With the lactose and GOS removed, ghee is low in FODMAPs and is typically well-tolerated by people following a low-FODMAP diet.
- Some experts recommend using ghee as a replacement for regular butter for those on a low-FODMAP diet, as it provides the benefits of butter without the FODMAP content.
Ghee is considered a low-FODMAP food option that can be consumed safely as part of a low-FODMAP diet. However, as with any food, individual tolerance may vary, so it's still recommended to monitor your own reactions to ghee if following a low-FODMAP eating plan.
Remember to start with small amounts of ghee and gradually increase to your desired taste and texture. Ghee has a distinct flavor, so you may need to adjust other ingredients in recipes to balance the taste. Always consult with a healthcare professional before making significant changes to your diet, especially if you have a medical condition like irritable bowel syndrome (IBS) or are following a low-FODMAP diet.
