Kuzu (also known as Kudzu) is a superior quality starch thickener with a smooth texture and neutral flavour. Commonly used for Macrobiotic recipes and Japanese desserts.

How to Use

Ideal thickener for soups and stews, sweet and savoury sauces, glazes and pie fillings, it is easy to use:

  • Dissolve in a small amount of cold water
  • Add the mix to to your cooking liquid
  • Heat, stirring continuously until thick and translucent.

A half to one tablespoon of kuzu will thicken one cup of liquid. Please note: 1 ¾ tbsp. of Kuzu can replace 1 tbsp of corn flour.

A Superior gluten free thickener

Kuzu has been a valued ingredient in Japanese cuisine and confectionery for more than two thousand years. Its a powerful thickening agent.

Kuzu powder is truly versatile, perfect for both sweets and cooking. It's not difficult to incorporate kuzu into your daily diet.
Why not start by mixing a little kuzu powder into your usual wheat flour or potato starch, or even replacing them, to enjoy the difference in texture?
As you continue to use it, you will come across recipes like 'For crispy fried chicken, nothing beats kuzu!' or 'The best topping for agedashi tofu is kuzu paste!' that make you realize the importance of kuzu in dishes.

In fact, approximately 10kg of kuzu powder can be obtained from 100kg of kuzu roots.
It is a rare ingredient, so it is not cheap, but we would be honored if you could experience the goodness of kuzu powder and have it join your dining table regularly. This versatile kuzu, which enhances the flavor of ingredients without compromising their taste, is gaining attention as a gluten-free and allergy-friendly option.

At Hirohachi-do, they have 'authentic kuzu' that can be shared with the world.
