WHAT IS SAUERKRAUT?
Traditionally, Sauerkraut is shredded cabbage that has been fermented by various lactic acid bacteria, including Leuconostoc, Lactobacillus, and Pediococcus. This dish has been around for many years and is seen in various cuisines around the world! Sauerkraut has now gained its popularity once again in today’s modern diet because it has shown to provide great benefits for gut health!
The Taste: Sauerkraut has a natural sour flavor which is a result from the lactic acid that forms when the bacteria ferments the sugars in the cabbage (There is no added vinegar!).
Many store bought Sauerkrauts are pasteurized and have lost their living” properties. This means all that healthy bacteria your gut was supposed to get is now compromised because of the pasteurization process! That is why in this class, we will teach you how to make Sauerkraut yourself so you can truly get all those beneficial living cultures back into your diet while making your own delicious flavours!
In this hands-on class, we will show you how to make sauerkraut step by step and the techniques required (specially how to make it here in Hong Kong). You will take home a recipe and your first hand crafted jar of sauerkraut to further ferment at home.
